While you're frying up some eggs and bacon, we're cooking up something else: a way to celebrate today's food holiday.

Hot off the press: April 12 is National Grilled Cheese Day!

Whether you call it a cheese toastie or a grilled cheese, odds are you're going to love the magic that happens when you simply melt your favorite cheese between two toasty pieces of bread. Other ingredients are up to you, but they all begin with the same kind of deliciousness.

Griddles, grills, skillets, panini presses, sandwich toasters or an iron if you're in a pinch are all great havens to toast your sandwich to crispy, melty perfection. And of course, butter or oil will only help you on the campaign for said perfection.

Try a twist on the traditional today by sampling a goat cheese and strawberry grilled cheese, and while you're at it, catch up on all our top tips for a magnificent melt:

That does sound great- I love scallions! I'll try that- maybe with the tomato, too. Thanks for the great idea! I also love to put herbs on the bread- like italian seasoning or oregano. Adds a bit of a kick- I like red pepper flakes, too.

And who do you suppose will beat him? Romney has lost the women's vote, the Latin vote, the black vote, all the democrat votes and half of the republicans vote. It looks like the only votes he will be getting is yours and his.
