While you're frying up some eggs and bacon, we're cooking up something else: a way to celebrate today's food holiday. The way they crunch, the way they dip - February 24 is National Tortilla Chip Day! If you've ever enjoyed the snacktastic crunch of tortilla chips with a hefty scoop of salsa, queso dip or buried beneath a mountain of nacho fixin's, then you might be inclined to write a song about them as well. Tortilla chips are the result of corn tortillas cut into wedges and then fried to perfection. Light, crunchy and just salty enough, they consist of simple ingredients: corn, vegetable oil, salt and water. Carranza received a Golden Tortilla award for her contribution to the Mexican food industry in 1994. Now, tortilla chips are the quintessential appetizer at Mexican restaurants all over the country. Honor Carranza and her incredible invention with homemade tortilla chips alongside roasted apple and tomatillo salsa, guacamole or even hot artichoke dip. You'll be singing "I Like Tortilla Chips" to anyone that will listen. |

When I make my personal nachos I put sour cream, guacamole, opinion, tomato, refried beans, cheese and sometimes chicken or ground beef.
When I eat nachos as a snack, I love to put cream cheese in a bowl and top with my favorite salsa and dip my chips into it. MMMMmmm the cream cheese soothes the hot salsa. So very good
It's nacho regular Friday, woo hoo. Nachos for lunch!
Now that's what I'm talking about. Doing nachos tonight!
